Almonds are part of the very core of the production of Noto. They are known and appreciated in all the world.

In the middle of August, using bamboo sticks and a lot of sunscreen, we start to collect them from our trees. We take off their husk by hand, one by one, not to destroy the perfection of their shells. We stretch them out in the sun for days until, shaking them near our ears, we hear the typical sound of the almond knocking on its shell. That's the signal, almonds are ready to be put in juta bags.

We put in our bags three different kind of almonds: the "pizzuta", so called for its pointed wooden shell, the "romana", bigger and tastier, and the "fascionello", smaller and rounder. Have fun identifying them!
