Carob trees, together with olives, are some of the most common trees in Sicily. These big green spots, weighed down during summer by long brown berries, can be found everywhere.
At the beginning of August, our ultracentennial carobs gift us with huge harvests. These unkown and forgotten fruits are great eaten freshly picked or toasted for a few minutes in your oven.
However, our speciality is the carob juice. We like to call it a juice even if it is a decoction. Carobs are boiled for hours until they grow together in a thick syrup with an intense perfume.
Carob juice is perfect for flu and cough. Try a teaspoon melted in hot water!
Used in the kitchen, it is great in baking as a substitute for chocolate or it can be used as syrup on ice-cream or cheese.
It certainly is a mysterious product... worth trying!
